Laat het geheel staan op een warme plaats tot het bobbelig wordt, gedurende 20 tot 25 minutenMix vervolgens de karnemelk en zout. Voeg 568 ml bloem toe. Meng het geheel door elkaar en roer het tot een glad geheel. Voeg de tarwekiemen en roggebloem toe om een stijf deeg te maken. Leg het deeg vervolgens op een met bloem bestrooid oppervlak en kneed het deeg totdat het veerkrachtig is. Gebruik meer bloem als dat nodig is. Doe het deeg in een ingevette kom. Bedek de kom en laat het deeg rijzen op een warme plaats totdat het verdubbeld is, ongeveer anderhalf uur. Kneed het deeg vervolgens en laat het 5 minuten rusten. Verdeel het deeg in tweeën. Maak van de twee helften, de vorm van een brood en doe deze in een daarvoor geschikte kom. Laat het vervolgens rijzen totdat het deeg weer verdubbeld is, ongeveer 45 minuten.
