Steek met een appelboor of een gewoon aardappelschilmesje in je aardappel en draai rond, alsof je een klokhuis uit een appel wilt halen. Steek de appelboor helemaal door de aardappel. Bewaar het stuk aardappel wat je eruit haalt later als plug om de aardappel weer docht te maken. Prik de aardappel een paar keer in met een vork en wrijf ze in met een beetje olijfolie en zeezout. Maak de vulling voor de aardappel klaar. Leg op iedere plak bacon 2 blaadjes salie, een ansjovisfilet en een plakje knoflook. Rasp er wat citroenschil over. Rol de bacon op zodat je een worstje krijgt. Stop in elke aardappel zo�n worstje. Maak je geen zorgen als ze een beetje uitsteken. Snijd de aardappelpluggen doormidden en stop ze aan beide uiteinden van het gat in de aardappelen, zodat de vulling op z�n plaats blijft. De pluggen zullen uit de aardappel steken, maar dat is prima. Leg de aardappelen op een bakplaat en zet ze ongeveer een uur in de voorverwarmde oven. Keer ze regelmatig totdat ze krokant, goudbruin en gaar zijn.
